He has since worked at New York staples such as Island Oyster on Governor’s Island and the fan favorite Sugarcane Raw Bar and Grill in DUMBO, Brooklyn. His passion for food and for his Nicaraguan culture has led him to Beacon, New York, introducing people to the rich and flavorful food of his country. He incorporates his mother’s old family recipes with a twist of his own personal touches. Chef Armando attributes his success and hard working mentality to his two mentors, Melissa Fox (Chef/Owner - A Casa Fox) and Steven Yen (Executive Chef- Sugarcane Raw Bar & Grill, TAO, Liberty National Golf Course) and to his upbringing on a farm as a boy in Tipitapa, Nicaragua.
